Damp meter pinless or not?

Having read many of the posts online regarding damp meters, I have just bought a pinless type as that seems to be the favourite. However, thinking about it, is this such a good idea because the walls of all motorhomes are coated with a plastic cover which will always register on the meter whatever the atmospheric humidity is at the time. Maybe I have it wrong and the coating is actually paper but it feels like plastic.
 
If the motor has previously had damp and damaged the ply wood but then the source of the leak has been fixed and effected area has dried out would this be a visual failure in a damp test or would it pass due to not showing up on damp meter as its now dry?
Ive a small area like this that I will fix eventually but atm its not important as the source has been fixed and the effected structure has been replaced, so its purely cosmetic damage.
 
If I remember correct:

Pin type; conductive technique
Surface type; inductive

Both require a set point when testing, ie first measurement to be kept. Measurements from hereonin relate to the difference from the set point.

Attempt to find an area in the vehicle, of the same material, where anticipated to be deemed dry for your set point measurement.
