Using the Dometic fridge 24/7 on mains. Sometimes we hear a rapid clicking noise. After a short while it stops then a little later begins again. After a number of times it stops for good untill a few days pass. So far everything working ok but thinking I might need to get a engineer out. Anyone experienced this before?

Before you pay for an engineer check the mains voltage inside your van.
I found my fridge sometimes clicked like this.
If the mains voltage is low, about 200V or so then it can't decide if it should to switch gas, tries to do so and then detects that it has mains electricity so switches back and repeats the process. ( the exact voltage range that causes this varies somewhere between 190 and 210 Volts. ) You are hearing the relay clinking.
I found out about this when the fridge only ticked when the heating is on. Many sites don't have thick enough cables so it is worse in winter.
Do check your mains cable as well. Some cheaper ones have iron instead of copper, this gives extra resistance so a bigger voltage drop.
 
Thanks to all. I have learned something. We are on Alde 3kw and auto selected on fridge. Seems likely voltage drop sets the gas igniter running. Have put fridge to manual setting 240v.
The Alde has a device that senses any draw such as kettle and automatically lowers to 2 or 1kw untill things switch off. Might be the fridge draw is too small to register with the Alde device. Just fitted winter vents tonight for the cold temperatures arriving.
 
Please check that enough air is circulating for the fridge.
I found the cupboard on top of my fridge got surprisingly warm! And the freezer was not as cold as usual.
When I removed the top vent all worked well.
The outside temperature was -5 to -7°C when it got to -10 a few nights later all worked well with just the bottom cover on.
