I did plan to buy a reefer to convert and actually did a drawing, I think I may have posted it before.

Which never used to show HGV MOT's, but obviously would show class 4.

You've got sleeping/cooking etc. in there so I can't see why it's not class 4.

Leving aside the issues of licences, taxes and tests, what I'd be wary of is where to park it. Almost no campsites will accept it. As you say, it's not good for layby life, so where will you park up? Seedy commercial estate roads are an option, but lack services.

Have to say never found sites an issue, often used ccc sites when full time for laundry days.
