I've had some input (via one of my daughters) from a Greek ear, nose and throat surgeon:
"It’s Ancient Greek “συμπήγνυμι” meaning to coagulate."
(She has used lower case Greek as opposed to the upper case Greek used in the mosaic).
So perhaps, interpreting that loosely, it indicates that the owners mix together ingredients just as one would expect a pharmacist to do.
