RIDGE MONKEY POT / griddle

I'm a Cobb user and fan.

Latest trick; prepare bread dough put it in the cobb and the charcoal cooks it just right before the heat goes off. Fresh bread on return from a day's walking.

Yes being sad I transported out monkey to Thailand.
No visa or tests needed !
Today Farmers Husband Omlette.
Parboil potatoes pumpkin and cauliflower.
Fry some onion in the monkey.
Add the vegetables and fry, add herbs etc
Then add an egg and milk mixture.
Cook with the lid closed and turnover after a few minutes and continue cooking.
Ps we used our charcoal "bucket BBQ" so care needed that it was not too hot.
Ps loads of Monkeys here...especially in LopBuri !

Pork and vegetable spring rolls.
Lazy pastry (frozen amd similar to filo). Cook filling, then place in pastry, roll up and smear with oil! 4 rolls worked well. As usual take care not to overheat. Cooked om charcoal bbq

Focaccia Bread

Ingredients250g strong bread flour , plus extra for dusting
4g dried fast action yeast
1 tsp fine sea salt
2.5 tbsp olive oil , plus extra for the tin and to serve 40ml
1 tsp flaky sea salt
¼ small bunch of rosemary , sprigs picked
Method
STEP 1
Tip the flour into a large mixing bowl. Mix the yeast into one side of the flour, and the fine salt into the other side. Then mix everything together, this initial seperation prevents the salt from killing the yeast.
STEP 2
Make a well in the middle of the flour and add 2 tbsp oil and 350-400ml lukewarm water, adding it gradually until you have a slightly sticky dough (you may not need all the water). Sprinkle the work surface with flour and tip the dough onto it, scraping around the sides of the bowl. Knead for 5-10 mins until your dough is soft and less sticky. Put the dough into a clean bowl, cover with a tea towel and leave to prove for 1 hr until doubled in size.
STEP 3
Oil a rectangle, shallow tin (25 x 35cm). Tip the dough onto the work surface, then stretch it to fill the tin. Cover with a tea towel and leave to prove for another 35-45 mins.
STEP 4
Heat the oven to 220C/200C fan/gas 7. Press your fingers into the dough to make dimples. Mix together 1½ tbsp olive oil, 1 tbsp water and the flaky salt and drizzle over the bread. Push sprigs of rosemary into the dimples in the dough.
STEP 5
Bake for 20 mins until golden. Whilst the bread is still hot, drizzle over 1-2 tbsp olive oil. Cut into squares and serve warm or cold with extra olive oil, if you like.

change to place in the monkey and close.
Yes leave to prove again and it will expand to fill the monkey nicely.

Step 4 /5 Cook on a low heat turning and checking but yes about 20 mins
 
Tried this.
1 Oil the monkey.
I used a ready mix plus some Fruit and the mix was fairly stiff.
Fill monkey about 3/4 and resist the temptation to open and look until both sides have been cooked for 10 mins or so.
Loads of other stove top recipes which should work well indeed better than in a frying pan as the monkey has a good oven effect.20211228_130635.jpg

Monkey Magic x 3 today

1 a cake..I have tried to make cakes fron scratch ! But I have found ready mixes so mucj better
A a chocolate cake 250 gm mix
B Today a fruit cake.....use the powder and eggs and oil/butter 250 gm mix is best as this fills the lower 1/2 but expands on cooking to nicely fill the monkey.
Dried fruit of choice folded in
Try to resit checking too soon leave at least 5 min B4 opening or turning over
Mybe 20 mins

2 a trip[e decker cheese sandwich..easy peasy

3 Roast pork and potato and onion
The pork here is excellent so a cutlet of loin about 1.5 in th[ck and seasoned
a medium potato halved lengthways and half an oinion
maybe 30 mins
 
like wully says the garage at home is full of good ideas but the two that find most use are the xl ridge monkey more i use it better i find it not just omelettes and toasties though i am a bit addicted and our mr D thermal cooker great curry’s & stews but we boiled up a gammon joint in coke left it for about 5 hours and i was counting on using some for cold ham next day no chance lol
