Scrambled eggs

After a lengthy discussion last night about how to make the perfect scrambled egg I copied Mr Admin Phils recipe to the letter this morning, Phil it was crap it was basically a rubbery tasteless mess so maybe tommorow you cook my breakfast of scrambled eggs on toast so I can see where I went wrong. ??

I love scrambled eggs with grated cheese and if I have a microwave on hand then imo that's the best way to cook them,BUT you have to be very careful not to overcook and turn it into rubber,I usually stop and check every ten seconds near the end, perfect fluffy eggs everytime.
 
My version. Crack 2 or 3 eggs into a bowl, add salt and pepper and beat well. Melt a knob of butter in a small sauce pan on a low setting. When melted, add 2 tablespoons of milk and let that warm up too. Add the egg mix and gently whisk on a medium heat. As the mix begins to set, tilt the pan slightly and whisk a bit more vigorously. Keep whisking until almost all set then take the pan off the heat altogether. The finished result should be a soft slightly runny mix. Leave it in the pan while you butter your toast, then put it on and eat every little scrap-much deliciousness!
 
I like my scramble eggs sloppy. Crack eggs in cold pan, knob of butter. Pan on heat, break eggs in pan, bit of pepper, no salt, scramble well every 10/15 second. While still sloppy, off heat and stir up few more time, get eggs out of pan and on to toast before it sets into a rubbery mass.

do tell your secret....have not managed to do a fluffy scambled micow. egg yet......oh....to be able to have a beautiful scrambled microw egg which looked and tasted delicious........
 
Best scrambled eggs ever 4 eggs small tub of Philadelphia put in pan no butter no milk just a little pepper and salt best scrambled eggs ever remember put full tub of Philadelphia inn not just a scoop you can que up and thank me later

It's all in the last twenty seconds,a few seconds over and they're gone,when you see them starting to firm up,take out for a quick stir,back in for ten,another quick stir and so on until perfect. I've never been able to get them as good in the pan but it's a fine line between ooh la la and oops!

+ one - with final 'cooking' off the heat.
In spring I like to sprinkle finely chopped chives on top before devouring.
Also good with some finely sliced smoked salmon added about 30 seconds before taking off the heat.

To get the perfect scrambled eggs you need to add a pinch or two of curry powder! A trick I learnt in Karachi.
 
scrammbled start them off then i turn off cooker as it eleltric and residual heat will cook them perfect

Well I never got my scrambled eggs on toast cooked by Admin he says he has run out of eggs a likely story lol.
 
annie supply him the egs then he wont have any excuse and you can tel us what they where like cooked the american way
