True, no one had mentioned alternatives to kingspan etc, spray foam gets right into the structure eliminating cold bridges more than other methods, and some may not even have heard of it.
 
Dail for pockets. king span for flat large space. 50 mm on floor
x 2 25mm sheets deep
Did 50mm batons or 2 x 25mm lenghts?
In total 70 mmm floor 35mm. roof.
roof vent is even lower ? Lowest point max fan with blind above cooker.
 
Insulation
50mm but maybe as 2x different 25mm !
When re-doing my house kichen on top og a solid concrete floor I used green insulatiing fibre board. Maybe use as one layer then whatever you like. (Then laminate flooring).
You might like to consider high quality laminate (15 year). It comes in a variety of colours etc.
It slots together (like Tongue anf grooved) with a (almost) seamless joint
Maybe lay cross-wise, starting at either the front or the back.
More manageable to handle and cut round the awkward bits !
Ps I also used the laminate flooring on a small triangular area of wall above a work surface and below the stairs where tiles were not needed.
Laminate is easy to clean !
Others with more knowledge and experience may so NO ?
