Ridge Monkey recipes

Ha Ha or 55.
Long day on the train to Bangkok yesterday..Hotel 10 pm !
So what has this got to do with Ridge Monkey...
Thailand has a huge chain of convenience stores which sell drinks snacks etc.
Very hungry so bought a cheese and ham croissant/sandwich which they cooked albeit in an electric sandwich toaster.
Very nice !
So Ridge monkey will be bought (assuming we get to uk)
But as. Benny Hil once said..never assume as it makes an.
ASS of U and.ME ?
My thought for the day,,
 
Today..
Gammon steak with various. veggies.
Courgettes onion mushroom tomato and orange segments
Tasty little smell or oil on hob.
Easy cleanup...gammon tender.
As Mr Punch would say.."Thats the way to do it"..Ok rice as well.
 
Easy omelette for 1.
2 eggs with a dash of milk mixed
First fry mushrooms and onion cut small.
Add egg mixture. Cook for a short time until egg not runny.
Add some cheese and cook a little more. By
Turn over RM open add some sliced tomato.
Cook until done turning over maybe 2x
 
Chicken and veggie pie.
Large leftovers from yesterday..cooked chicken mushroom carrot courgettes onion potato.(casserole)
Liquid drained then half block of puff pastry defrosted.and rolled out (Or pastry sheets)
Form a pie and RM for 30 mins.
Medium heat briefly to start then low.
Turn over every 5 mins..... 1/3rd left for lunch tomorrow.
 
Recently
1 cook fat sausages for brekkie
2 toasted cheese and onion sandwich
3 reheat cornish pasties
All good.
No 3 also good for sausage rolls hot cross rabbits and the like.
Great no need to use oven...(which we use as a bread cupboard)
 
I'm struggling with the concept of the need for a Ridge Monkey type cooking gadget.
Surely it's two frying pans (one on top of another) by another name?
If so, I can cook anything a Ridge Monkey can cook in a covered frying pan - and I know how to turn food over in a frying pan to cook the upper surface.

Or am I missing something?

I’ve struggled to find a piece of kit that would act as good as an oven. With very limited success. My van is not equipped with one. Despite spending ridiculous amounts of money. Large ridge monkey? To big for my hot plate, burnt the worktop. Omnia oven? Similar problem. Plus try and get a Pukka pie into that circle.
Now, thanks to a very good friend, I’ve swapped my Combi Ridge Monkey for an XL ( confusing part about that, is the XL is half the size of the Combi) Pukka pies, frozen fish fillets now fit beautifully, and cook to perfection. Oven chips are now transformed into a culinary delight, by using the Omnia on a camping stove.
I do realise that these high dining experiences are not for everyone , although I think it’s something that should be aspired to.
Banana bread is probably a recipe to far.
 
Today Full meal a la monkey !
1 Chipolata sausages, add onion as well and cook with minimal oll.
Transfer to bowl and cover with foil.
2 Thinly sliced potatoes..(evenly cut) a little more oil and cook quite hot so almost roasted.
Transfer...to sausage and onion bowl.
3 Mushroom and pepper (or what suits)..quick cook.

One pan and minimal mess.
 
Standard plain flip over one.
Closed for the oven effect.
But did not turn the monkey, just open and turn the food.
Potatoes not pre-cooked.
Alternative is frozen potato waffles or similar but we prefer "proper food".

Good tonight.
Sausage etc pie.
Many recipes use raw sausage but imo the 35 min cooking time would burn the pastry, and a danger that the sausages would not be cooked!
I improvised as follows.
1 Fry the sausages then when cool cut lengthwise and again into chunks.
2 Fry onions and more.
I used cabbage sliced a la coleslaw and potatoes sliced and cut like chips but smaller (so they cook)
Add pepper and other herbs/spices to suit. Soy sauce and water.
Cook until soft.
3 using ready rolled pastry use half a pack lay out, lay some of the veg on the pastry.
Them the chopped sausages followed by more veg on 1/2 the pastry.
Fold the pastry over and seal.
4 Put in the monkey close and cook on minimum gas.
Turn over and check every 5 mins or so.

The frying pan can be wiped clean with kitchen paper as can the monkey !
Yes a 2 stage process but little mess and cleaning.
Add a bit of salad as well !

PS yesterday..ready breaded fish "oven baked" in the monkey !
On low gas but not the lowest. Courgettes and sliced spuds
It suits us very well.

With potatoes I find it best if they are "par-cooked" before the monkey business.
Roast potatoes work..par-boiled and cut small and use minimal oil !
