The Bread and Baking Thread

Been on YouTube and put up baking bread secretes ( Michelle's little piece of heaven)and wondered what your views on this were, don't get to excited by the name, sorry I can't put a link up, cos I don't know how to, gerry
Thanks for bringing the You Tube channel to our attention, Gerry. I'll have a look at it later in the week and get back to you.

I gave the wholemeal sourdough a go. The dough was very wet increasing the liquid to 425g. It took longer to rise, my second rise is in the fridge overnight. The result was a rather shapeless blob as it spread to fit my Le Creuset casserole which is oval. Tastes delicious!75B95B9A-7446-4F9A-B690-E8A26CADC4B9.jpeg
 
Yesterday was a (mainly) indoor day so I did a bit of baking:

Wholemeal sourdough loaf, white bread rolls and chocolate fudge crinkle biscuits.
Sticking to a diet in the winter is not a straightforward matter!

That looks lovely especially the cookies! I was only going to post my 100% granary sourdough but I couldn’t resist showing this morning’s efforts - I am feeding the freezer!

I was a post-war Marmite baby and have been so for over 70 years.
So today I decided to combine my long standing love of Marmite with my new-found love of baking:

I've noticed that baked products other than bread are (quite rightly) gradually being introduced into the thread. What are your thoughts on a change of thread title to 'The Bread and Baking Thread' ?

The weather was absolutely pitiful this afternoon.
So I had a baking moment or two to cheer things up:

These are Chocolate Chip and Glacé Cherry Oaties. They're not at all bad with the biscuit itself having a background flavour and texture reminiscent of Hobnobs. The chocolate flavour dominates so next time (and there'll definitely be a next time!) I'll probably miss out the glacé cherries and incorporate more choc chips.

Hi Colin my thoughts are it's your thread do what you want. And happy if you make a separate thread or change the name. A wee lazy spell got all the ingredients to make a loaf but can't motivate myself. Marmite breakfast biscuits ( I am making faces everytime I read marmite :eek:) so how do I say this is the marmite over powering how does it taste. Gerry
 
After talking to one of my relatives about this thread I recieved an unexpected parcel. A sourdough kit. She gets her bread from Proof Bakery, Coventry and saw this on their website. I'll have to make at least one sourdough loaf now.
Look forward to seeing the finished product!
 
Colin this is the recipe. 13oz warm water. 1 1/4 tsp salt. 1 1/4 tsp yeast. 3 1/2 cups of bread flour. I heated my water and bowl in microwave. Sticking my finger in tells me it's the right temperature then add salt and yeast. Give a stir. Then add bread flour mix with spoon handle. Then put cling film over and leave for 1 1/2 hour. Then give it a de gas and stir. Then I put it in a frying pan coated with a bit oil. And covered with cloth for 30 minutes. A put my oven on at 450 degrees f. My Dutch oven is in the oven at this time. After 30 minutes I bring dutch oven out put my dough in dutch oven and lid back on. Back into oven for 30 minutes. On the Bottom rack of oven After That the recipe say take lid of for 3 to 15 minutes. I took it out after 2 minutes. Tasted nice. You can do it in a open tin. But baking temperature would change to 400 degrees f. And bake for 40 minutes on the middle shelf. Gerry

I'm doing two weeks self isolation before going I to hospital for tests. And I'm bored. I get everybody in hospital must be safe and rightly so. I found artisanbreadwithstev. On YouTube. And could understand his methods. I have made three different loafs from the 23rd. A made a cinnamon/raisin loaf. I enjoyed that. And my next one il put come icing on it. And a had a bag of muesli don't know why I bought it as its not my thing. Anyway put in recipe with muesli and found a loaf recipe turned out good tasted better than I thought it would I added sultanas as I had them. Colin you say your making biscuits what have you been making and how did thay turn out. Gerry
If you're collecting information and equipment prior to making sourdough bread later in the spring, Rog, I'd recommend getting your first sample of starter from someone already in production.
I'd be happy to pass some on but I'm not quite sure when we'll meet up.
On the other hand, if it helps, I could post some to you........
